It uses to measure the alpha-amylase enzyme activity in grain, flour and other products contain amylum, it’s the quality testing equipment uses in grain storage,flour processing,foodstuff processing, etc. Principle of the instrument are: Using the gelling starch liquefaction and decomposition by a- amylase to measure activity of enzyme, the viscosity of gelling liquid obvious drop after liquefaction and decomposition, therefore, according to the changes in viscosity can reflect the content of the enzyme. The little Falling Number, low viscosity, show the strong activity.
